Herb Chicken, Roasted Pumpkin and Mushroom Pizza on a Cauliflower Pizza Base.
Try this delicious pizza made with a cauliflower base. Many of you love pizza and this one is with a twist.
Suitable from step 3 (2 serves) approx. 277 kcal per serve
Serve with a side salad or vegetables.
Preheat oven to 180°
Cut up pumpkin and chicken sprinkle with herbs and garlic, roast until cooked
Lightly steam Cauliflower rice, once done place rice in a clean tea towel or cloth and wring out excess water (it is essential to do this to get a nice crisp base)
In a bowl mix egg, herbs, cottage cheese and cauliflower rice. Place mixture on a flat tray with grease proof paper.
Cook in the oven for approx. 30 minutes or until golden brown.
Spread a thin layer of tomato paste and place the rest of the ingredients on top.
Bake for a further 10 mins or until cooked.
