Recipe of the Week: Pizza!

Herb Chicken, Roasted Pumpkin and Mushroom Pizza on a Cauliflower Pizza Base.

Try this delicious pizza made with a cauliflower base. Many of you love pizza and this one is with a twist.


Herb Chicken, Roasted Pumpkin and Mushroom Pizza on a Cauliflower Pizza Base

Suitable from step 3 (2 serves) approx. 277 kcal per serve

Serve with a side salad or vegetables.

  • 200 g Chicken Breast
  • 100 g Butternut Pumpkin
  • 1 tbsp Tomato Paste salt reduced
  • Herbs fresh or dried: basil, thyme, oregano
  • 1 Egg
  • 300 g Cauliflower rice
  • 50 g Low fat Cottage Cheese
  • 2 cloves Garlic
  • 20 g Reduced fat shredded Mozzarella
  • 50 g Capsicum
  • 50 g Mushrooms


  1. Preheat oven to 180°

  2. Cut up pumpkin and chicken sprinkle with herbs and garlic, roast until cooked

  3. Lightly steam Cauliflower rice, once done place rice in a clean tea towel or cloth and wring out excess water (it is essential to do this to get a nice crisp base)

  4. In a bowl mix egg, herbs, cottage cheese and cauliflower rice. Place mixture on a flat tray with grease proof paper. 

  5. Cook in the oven for approx. 30 minutes or until golden brown.

  6. Spread a thin layer of tomato paste and place the rest of the ingredients on top.

  7. Bake for a further 10 mins or until cooked.

    Does the cauliflower flour actually tasting cauliflower or is it bland like normal flour?
