The L Word

Let’s discuss the L word… I’m talking about Lunch! Is the simple green salad getting a little monotonous? Why not try some of these delicious ideas. You can use the calories from your dinner allowance.

 

Egg Salad

Ingredients

  • 1 Boiled Egg
  • 1 spoon Natural Yoghurt
  • Mustard Powder
  • Lettuce
  • Sprouts
  • Cucumber
  • Celery
  • Fresh Dill

Instructions

  1. Boil the egg.

  2. Mix with a spoon of natural yoghurt and some mustard powder.

  3. Mix in with the lettuce, sprouts, cucumber, celery and dill.

 

Tuna Salad bowls

Servings 1
Calories 108 kcal

Ingredients

  • 1 Little Gem Lettuce
  • 1/4 Cucumber
  • 75g Tuna
  • 3 Cherry tomatoes

Instructions

  1. Cut cherry tomatoes in half.

  2. Add all ingredients together.

  3. Add in a 1/2 tablespoon of fresh or dried chilli or lemon.

 

Chickpea, Spinach and Mushroom Soup

Servings 4
Calories 54 kcal

Ingredients

  • 1 Can Chick Peas
  • 100g Spinach
  • 100g Chopped Mushroom
  • Cambridge Weight Plan Vegetable Flavouring

Instructions

  1. Cook chickpeas in 1 litre of water for 30 mins.

  2. Blend spinach and chopped mushrooms and cook for a further 20 mins

  3. Add in some Cambridge Weight Plan flavouring 

 

Tzatziki Dip

Servings 1
Calories 34 kcal

Ingredients

  • 200g Natural/Greek yoghurt
  • 1 Cucumber
  • Minced Garlic Clove
  • Fresh Lemon
  • Finely Chopped Mint

Instructions

  1. Cut cucumber into sticks 

  2. Mix other ingredients together
