In need of some inspiration for a weekday meal? Requiring only a small number of ingredients, this dish is quick and easy to make and delightful to eat. Suitable for step 3 and above.
Preheat Oven to 200°C.
Cut the top off the Capsicums and remove the seeds and membranes.
Bake in the Oven for 15 mins.
Spray oil in frying pan and cook the chopped up onion, crushed garlic and grated carrot for 5 mins, add in the Mince until browned.
Add in the tinned tomatoes, tomato paste, Veg stock, herbs and some water to simmer.
Fill the Capsicums with even amounts of the Bolognese, sprinkle each with a tablespoon of grated parmesan and chopped coriander.
Serve with a side Salad of leafy greens, cucumber and a drizzle of balsamic vinegar.
