Bolognese Stuffed Capsicum

In need of some inspiration for a weekday meal? Requiring only a small number of ingredients, this dish is quick and easy to make and delightful to eat. Suitable for step 3 and above.

Bolognese Stuffed Capsicum

Servings 4 people
Calories 300 kcal


  • 4 Capsicums
  • 1 Onion
  • 500g Lean Beef Mince
  • 1 Grated Carrot
  • 1 Can of Diced Tomatoes
  • Coriander, Freshly Chopped
  • 1 Cucumber
  • 2 Garlic Cloves
  • Green Leaf Salad Mix
  • 3 tbsp Reduced Salt Tomato Paste
  • 1 tbsp Grated Parmesan (Per Serve)
  • Oregano (Fresh or Dried)
  • Thyme (Fresh or Dried)
  • Cambridge Weight Plan Savoury Vegetable Drink Mix
  • Light Olive Oil Spray


  1. Preheat Oven to 200°C.

  2. Cut the top off the Capsicums and remove the seeds and membranes.

  3. Bake in the Oven for 15 mins.

  4. Spray oil in frying pan and cook the chopped up onion, crushed garlic and  grated carrot for 5 mins, add in the Mince until browned.

  5. Add in the tinned tomatoes, tomato paste, Veg stock, herbs and some water to simmer.

  6. Simmer until sauce has thickened.
  7. Fill the Capsicums with even amounts of the Bolognese, sprinkle each with a tablespoon of grated parmesan and chopped coriander.

  8. Bake for a further 15mins.
  9. Serve with a side Salad of leafy greens, cucumber and a drizzle of balsamic vinegar.
