What a glorious little powerhouse eggs are! Eggs are classed as a superfood, they are a perfect protein source as they contain all the essential amino acids, vitamin D, vitamin E A and B12 and lots of other goodness! There are so many uses for eggs, why not try one of these delicious recipes:
Egg, red onion, capsicum, mushroom and spinach and chopped parsley, pepper to taste. Delicious at any time of the day.
Place broth and rice in a large saucepan and bring to boil, simmer for 15 mins or until rice is cooked. Add chicken, remove the soup from heat and cover. Whisk the eggs and lemon juice in a medium bowl until frothy. Slowly add 1 cup of hot chicken broth to the lemon and eggs mixing continually. Slowly stir the warmed eggs into the soup. Ladle soup into bowls, serve immediately with a slice of lemon.
1 Egg per wrap
Heat a small skillet over a medium heat, spray lightly with oil, crack egg and mix well with a fork. Pour into hot pan and tilt pan to spread egg into a large circle. Let it cook for 30 seconds (sprinkle with herbs or spices) Carefully flip with a large spatula and cook for another 30 seconds. Remove from heat, you can cook a few of these ahead of time. You can add any fillings to your wrap.
